Chickpea Salad
Chickpea salad is a simple and affordable dish that comes together in minutes and can be served on salads, in sandwiches and wraps, and can be served as a snack with crackers and sliced veggies.

Ingredients

1-15 oz. can chickpeas, drained and rinsed

¼ cup finely diced red onion

1 large stalk celery, finely diced

2 Tbsp sweet relish

1 Tbsp brown or dijon mustard

Juice of ½ lemon

1 tsp garlic powder
-
1 tsp onion powder
-
1 Tbsp fresh or dried minced parsley

¼ tsp sea salt

1/4 cup vegan mayo

Garnish: ground paprika

Preparation
Add chickpeas to the bowl and mash with the back of a fork until flaky. Add all remaining ingredients to the bowl and mix until well combined. Garnish with a sprinkle of ground paprika and allow to chill in the refrigerator for at least 30 minutes to allow flavors to combine. Serve on a salad, in a sandwich, or in a wrap.
Tips
Want to add some seafood flavor to you chickpea salad? Add in a sprinkle of Old Bay seasoning or a pinch of seaweed flakes like kelp or dulse.
