Simple, smoky, and savory with a kick of spice, this Smoky Chipotle Pumpkin Hummus is easy to prepare and the perfect dip at snack time. Plus you can spread it on bagels, sandwiches wraps and more!

INGREDIENTS
1 – 15 oz can chickpeas, drained and rinsed
½ cup pumpkin puree
¼ cup extra virgin olive oil (optional)
¼ cup tahini
1-2 whole chipotle peppers in adobo sauce
1 Tbsp garlic powder (can be substituted for 3-6 cloves roasted garlic)
1 tsp ground cumin
1 tsp smoked paprika
½ tsp sea salt (optional)
½ lemon, juiced
INSTRUCTIONS
Add all ingredients to a blender or food processor and blend until smooth. Scoop into a serving bowl and serve with chips, sliced vegetables, on pita bread, or as a spread on sandwiches and wraps. Can be stored in an air-tight container in the refrigerator for up to a week.
TIPS
You can use canned pumpkin puree to make this recipe extra simple, or you can use diced fresh or frozen pumpkin or butternut squash. Just steam and blend until smooth before combining with the remaining ingredients.
