Vegan Chopped Cheese Sandwiches

Vegan Chopped Cheese Sandwich

Get ready to meet your new sandwich obsession—our vegan chopped cheese sandwich. It's got all the yummy flavors and textures of the classic NYC bodega favorite, but we've made it better with plant-based ingredients. Instead of browned ground beef, we've used a combo of mushrooms and lentils. It's super easy and affordable to make, and you can have a tasty sandwich at home in no time!

Kitchen Tools Needed:

  • Food Processor


  • 2 - 6 oz. cans mushrooms, rinsed and squeezed dry

  • 1 ½ cups boiled green lentils

  • 3 Tbsp oil

  • 1 ½ Tbsp soy sauce

  • Salt and pepper to taste

  • 1 medium yellow onion, sliced

  • 2 slices vegan cheddar cheese (or ½ cup shredded vegan cheddar)

  • 2 Vegan hoagie or hamburger buns

  • 1 large tomato, sliced

  • Shredded romaine or iceberg lettuce

  • Ketchup

  • Vegan mayonnaise


  1. Preheat the oven to 400 degrees F. 

  2. Add mushrooms, lentils, soy sauce, and 1 Tbsp of oil to the food processor and pulse for 7 seconds until chopped. Line a baking sheet with parchment paper and spread the lentil and mushroom mixture into an even layer. Bake for about 20 minutes until the chopped lentils and mushrooms appear dry and almost crispy on the surface. Remove from the oven and set aside.

  3. Heat a large saute pan over medium heat. Add the remaining oil along with the sliced onions to the pan and spread into an even layer. Cover with a lid and allow to cook for 1-2 minutes until the onions begin to sweat. 

  4. Remove the lid and add the baked lentils and mushrooms to the pan. Season with salt and pepper to taste and saute the mushrooms, lentils, and onions for about 1 min. Add the vegan cheese to the surface of the sauteed mixture and cover with a lid. Reduce the heat to medium-low and allow to cook undisturbed for 3-5 minutes, until the cheese melts. Gently mix together the lentil, mushroom, onion, and vegan cheese mixture, so that the vegan cheese is well distributed in the pan, but streaks of the vegan cheese remain visible. Remove from heat and set aside.

  5. To assemble the chopped cheese sandwiches, spread vegan mayonnaise and ketchup on both sides of each bun. Spoon equal amounts of the chopped cheese mixture into each bun and top with shredded lettuce and sliced tomatoes. Slice your sandwiches in half and enjoy!
