Ingredients

For the Jackfruit:

  • 1 can jackfruit in brine, drained and shredded

  • 2 cloves garlic, minced

  • 1 small onion, finely chopped

  • ½ tsp salt

  • ½ tsp black pepper

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp smoked paprika

  • ½ tsp dried oregano

  • 2 cups BBQ sauce

For the Coleslaw:

  • 3 cups vegan coleslaw mix

  • ½ cup vegan mayo

  • 1 tbsp apple cider vinegar

  • 1 tsp sugar

Instructions

  1. Prep the Jackfruit

    1. Drain and rinse the jackfruit. Use your hands or a fork to shred it and squeeze out as much liquid as possible. Pat dry with a paper towel.

  2. Cook the Jackfruit

    1. In a pan over medium heat, add oil, garlic, and onion. Sauté for 2–3 minutes until fragrant.

    2. Add shredded jackfruit and season with salt, pepper, garlic powder, onion powder, smoked paprika, and oregano.

    3. Cook for another 5 minutes, then stir in BBQ sauce to coat evenly.

  3. Bake the Jackfruit

    1. Transfer jackfruit mixture to a parchment-lined baking sheet.

    2. Bake at 400°F for 20–25 minutes, flipping halfway through, until the edges start to crisp and caramelize.

  4. Make the Coleslaw

    1. In a bowl, mix coleslaw blend, vegan mayo, apple cider vinegar, sugar, and a pinch of salt, pepper, and garlic powder.

    2. Taste and adjust seasoning as needed. Let chill while jackfruit bakes.

  5. Assemble the Sliders

    1. Add a generous scoop of BBQ jackfruit to the bottom bun.

    2. Top with creamy coleslaw and the top bun. Serve immediately!
