Ingredients


Pancake Tacos

  • 2 cups premade vegan pancake mix (follow package instructions for additional ingredients)


Just Egg Scramble

  • 1 cup Just Egg

  • Onion

  • Fresh garlic

  • 1/2 tsp black pepper

  • Salt to taste


Other Fillings & Garnish

  • 4 Beyond Meat sausages, cooked and crumbled

  • Maple syrup, for drizzling

  • Fresh parsley, for garnish


Instructions


Step 1: Make the Pancake Taco Shells

  1. Prepare the pancake batter according to the package instructions.

  2. Cook pancakes in a non-stick skillet or griddle, making them slightly smaller and thicker than usual so they hold the taco shape.

  3. Once cooked, fold them gently and set them aside.


Step 2: Prepare the Just Egg Scramble

  1. Heat a non-stick pan over medium heat.

  2. Saute' onions and garlic.

  3. Pour in Just Egg and season with salt and black pepper.

  4. Scramble for 3-5 minutes, stirring occasionally, until the mixture firms up. Remove from heat.


Step 3: Cook the Beyond Meat Sausage

  1. Heat a small skillet over medium heat.

  2. Cook the Beyond Meat sausages according to package instructions, then crumble them into bite-sized pieces.


Step 4: Assemble the Breakfast Tacos

  1. Take a folded pancake and fill it with Just Egg scramble and Beyond Meat sausage crumbles.

  2. Drizzle with maple syrup and sprinkle with fresh parsley for a pop of flavor.

  3. Serve immediately and enjoy!
