Ingredients
For the Pasta Salad:
16 oz rotini or elbow pasta
1 cup cherry tomatoes, halved
1 cucumber, diced
½ red onion, thinly sliced
1 bell pepper, diced
For the Creamy Italian Dressing:
1 cup vegan mayo
2 tbsp apple cider vinegar
1 tsp Italian seasoning
½ tsp garlic powder
Salt & pepper to taste
Instructions
Cook the Pasta: Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente. Drain, rinse with cold water, and set aside to cool.
