Ingredients

For the Pasta Salad:

  • 16 oz rotini or elbow pasta

  • 1 cup cherry tomatoes, halved

  • 1 cucumber, diced

  • ½ red onion, thinly sliced

  • 1 bell pepper, diced


For the Creamy Italian Dressing:

  • 1 cup vegan mayo

  • 2 tbsp apple cider vinegar

  • 1 tsp Italian seasoning

  • ½ tsp garlic powder

  • Salt & pepper to taste



Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente. Drain, rinse with cold water, and set aside to cool.

  2. Make the Dressing: In a small bowl, whisk together vegan mayo, apple cider vinegar, Italian seasoning, garlic powder, salt, and pepper until creamy and well combined.

  3. Prep the Veggies: While pasta is cooling, dice the cucumber, halve the cherry tomatoes, slice the red onion, and dice the bell pepper.
