RECIPE
Rainbow Coleslaw is the perfect simple veggie filled side dish to round out any plate. The use of a variety of colorful veggies means this dish is full of flavor, texture, fiber, and lots of nutrients.
Makes 12 servings
INGREDIENTS
1/2 head green cabbage, shredded
4 cups kale, roughly chopped
1 cup shredded carrots
1 bell pepper, thinly sliced
3 scallions thinly sliced
1 handful fresh parsley, finely chopped
1/2 cup vegan mayo
1/2 cup French dressing, check ingredients to make sure there are no milk or honey ingredients
1/2 lemon or lime, juiced
1 tsp onion powder
Sea salt and pepper to taste
Optional add-ins
Shredded purple cabbage
Chopped broccoli florets
Snap peas
Fresh corn
INSTRUCTIONS
Add all ingredients to a mixing bowl and mix until well combined. Allow to chill in the refrigerator for at least an hour before serving for best flavor.
