Vegan Creamy Vegetable Pasta

This Vegan Creamy Vegetable Pasta is a delicious and satisfying meal that's perfect for a weeknight dinner or a casual lunch. It's packed with vegetables and has a flavorful sauce made from coconut cream that everyone will love.

Cook Time: 25 minutes | Servings: 4-6


  • 1 lb pasta of your choice 

  • 1 tablespoon olive oil 

  • ½  onion, sliced 

  • 5-7 cloves garlic, minced 

  • ½ bell pepper, sliced 

  • 1 tomato, diced

  • 1 can (400ml) coconut cream 

  • 1 teaspoon dried Italian herbs 

  • Salt and pepper, to taste 

  • Add whatever veggies ya got in (spinach, broccoli zucchini, etc)

  • Vegan Cheese, grated or finely chopped

  • Fresh herbs, for garnish


  1. In a large pan, heat olive oil over medium heat.

  2. Add onion and garlic, sautéing until the onion becomes translucent.  Add other veggies to the pan. Cook for about 5 minutes, or until the vegetables are tender but still crisp. 

  3. Reduce heat to low and pour in the coconut cream. Add dried Italian herbs, salt, and pepper. Stir well to combine. 

  4. Add in vegan cheese.

  5. Cook pasta according to package instructions until al dente. Drain and set aside. 

  6. Let the sauce simmer for a few minutes to thicken slightly. 

  7. Add the cooked pasta to the sauce, tossing to coat the pasta evenly with the sauce. 

  8. Serve hot, garnished with fresh herbs.
