2 cups mushrooms, sliced: $2.50
1 onion, chopped: $0.50
3 cloves garlic, minced: $0.25
1 cup vegetable broth: $1.00
1 can coconut milk: $2.00
2 tbsp nutritional yeast: $1.50
Salt and pepper to taste: $0.25
1 tbsp olive oil: $0.50
Fresh parsley (optional): $1.00
Total: $10.75

Ingredients:
1 lb pasta
2 cups mushrooms, sliced
1 onion, chopped
3 cloves garlic, minced
1 cup vegetable broth
1 cup unsweetened plant-based milk
2 tbsp nutritional yeast
2 tbsp Italian seasoning
Salt and pepper to taste
1 tbsp olive oil
Fresh parsley (optional)
Instructions:
Cook the Pasta:
Cook the pasta according to package instructions. Drain and set aside.
Prepare the Sauce:
In a large skillet, heat 1 tbsp olive oil over medium heat.
Add the chopped onion and minced garlic, and sauté until the onion is translucent.
Add the sliced mushrooms and cook until they release their moisture and start to brown.
Make the Creamy Sauce:
To a blender, add everything from your pan plus the coconut milk and vegetable broth
Blend until smooth
Return mixture to pan
Season and Combine:
Stir in the nutritional yeast, Italian seasoning, salt, and pepper. Mix well.
Add the cooked pasta to the skillet and toss to coat with the sauce.
Serve:
Garnish with fresh parsley if desired.
Serve hot and enjoy your creamy mushroom pasta!
