5 Easy Vegan Microwave Meals for Students

If you're a college student living in a dorm, your first apartment, or anywhere with a really limited kitchen, figuring out what to eat can be a challenge. Maybe you have a microwave but no stove. Maybe you have a mini fridge and a very small grocery budget. Or maybe you're simply trying to avoid spending money on takeout every day. Whatever your situation, you can still make simple, filling vegan meals with the kitchen space and ingredients you have available.


In this post, I'm sharing five easy microwave-friendly meals that are affordable, flexible, and perfect for student life.



Peanut Butter Banana Oatmeal

Let's start with breakfast.


Peanut butter banana oatmeal is a great option for busy mornings when you need something quick before heading to class. Oatmeal is inexpensive and easy to keep in your pantry or dorm room. You can also change up the toppings depending on what you have available. Bananas add natural sweetness, while peanut butter adds protein and healthy fats. You can also add berries, nuts, or seeds when you have them.


The best part? You can have a warm breakfast ready in just a few minutes.

Lentil Vegetable Soup

When you want something warm and comforting, lentil vegetable soup is a great option.


Lentils are an affordable plant-based protein source, and using canned lentils and frozen vegetables makes this meal especially convenient when you're working with limited kitchen space. Add tomatoes, vegetable broth, and your favorite seasonings, and you have a warm bowl of soup without needing a stove. This is also a great meal for stretching your grocery budget. Canned and frozen ingredients can be helpful to have on hand because they last longer and make it easier to put together a meal when your fresh groceries are running low.

Nourish Bowl

Nourish bowls are one of my favorite meals because there really isn't one right way to make one. You can start with rice, quinoa, potatoes, or another grain. Add beans or another plant-based protein, throw in whatever vegetables you have available, and finish everything with a sauce you love.


This is also a great way to use leftovers. Have some rice from yesterday? Use it. A few vegetables that need to be eaten? Add them. Half a can of beans sitting in the fridge? Throw those in too. Instead of letting those small amounts of food go to waste, turn them into a meal. For students trying to save money, this is a great habit to develop because you're getting more use out of the groceries you've already purchased.


Think of your nourish bowl as a formula:

Carb + Protein + Vegetables + Sauce = Meal


You can change the ingredients based on your budget, preferences, and what's available.



BBQ Tofu Sandwich

Let's talk about lunch.


A BBQ tofu sandwich is a simple way to turn a few inexpensive ingredients into a satisfying meal. Tofu is an affordable plant-based protein that you can season in so many different ways. For this sandwich, we're using BBQ sauce to give the tofu plenty of flavor without needing a long list of ingredients. Add your BBQ tofu to your favorite bread and then load it up with the toppings you enjoy.


I like greens and pickles, but you could also add:

  • Sliced tomatoes

  • Onions

  • Avocado

  • Vegan mayo

  • Coleslaw

  • Other vegetables you have available


Another thing I love about using tofu is that you don't have to use it for just one meal. If you're already heating some up, make extra. The next day, you can add it to a rice bowl, wrap, or salad. That's one of the easiest ways to make your groceries stretch further: cook once and use the ingredient in multiple meals.



Microwave Mug Brownie

And, of course, we need dessert!


This microwave mug brownie is perfect when you're craving something sweet but don't want to make an entire cake or batch of brownies. It's a single-serving dessert, which means you can make just enough for yourself. You can also customize it with whatever you have available.


Try adding:

  • Chocolate chips

  • Berries

  • Vegan whipped cream

  • Peanut butter

  • Nuts


It's a simple reminder that having a limited kitchen doesn't mean you have to skip the fun foods. Sometimes you just need a mug and a microwave!



Making Plant-Based Eating Work With What You Have

One of the biggest misconceptions about plant-based eating is that you need a huge grocery budget, a fully stocked kitchen, or a long list of specialty ingredients. You don't.


Start with foods that are affordable and easy to store. Rice, oats, beans, lentils, potatoes, tofu, frozen vegetables, canned tomatoes, and sauces can give you plenty of options. And don't underestimate the value of leftovers. One ingredient can become multiple meals throughout the week. That can help you save both time and money.


For example, leftover BBQ tofu can become tomorrow's rice bowl. Extra rice can become the base for a nourish bowl. Frozen vegetables can go into soup, bowls, or whatever meal you're putting together. You don't have to make every meal from scratch.
