These sweet and savory baked beans are high in fiber and protein. They make a satisfying saucy and smoky side dish.
Makes 6-8 servings
2 cans white beans, drained & rinsed (you can also use canellini beans, small pink beans, or pinto beans)
1/2 cup finely diced onion
1/2 cup finely diced bell pepper
1 Tbsp minced garlic
1/2 tsp sea salt
3 Tbsp tomato paste
3 Tbsp brown sugar or maple syrup
2 Tbsp brown mustard
1/3 cup vegan friendly BBQ sauce
1 tsp smoked paprika
1/2 cup water or vegetable broth
Preheat oven to 375 degrees Fahrenheit
Add all sauces and spices and vegetables to a casserole or baking dish and whisk together until well combined.
Add beans and gently stir together until evenly coated with sauce.
Cover with lid or aluminum foil and cook for 35-40 minutes until beans are simmering and edges of pan have begun to darken an carmelize. Allow to cool for about 10 minutes before serving.
