That’s where these quick, vegan breakfast ideas come in. They’re perfect for meal prepping, storing in mason jars, and grabbing on the go. Not only are these recipes simple to prepare, but they’re also packed with the nutrients you need to power through your day.


Berry Banana Smoothie

Smoothies are a classic quick breakfast, and when stored in a mason jar, they become even more convenient. This Berry Banana Smoothie is refreshing, naturally sweet, and full of vitamins and antioxidants.

Ingredients:

1 banana, sliced and frozen

1/2 cup mixed berries (blueberries, strawberries, raspberries)

1 cup almond milk (or any plant-based milk)

1 tbsp chia seeds

1 tbsp almond butter

1 tsp vanilla extract


Instructions:

In a blender, combine the banana, mixed berries, almond milk, chia seeds, almond butter, and vanilla extract.

Blend until smooth.

Pour the smoothie into a mason jar.

Seal the jar and store it in the fridge until you’re ready to head out.


Meal Prep Tip: Prepare several jars with all ingredients except the almond milk. When you're ready to blend, just add the milk and go!


Cinnamon Apple Overnight Oats

Overnight oats are a time-saving breakfast that you can make the night before. This Cinnamon Apple Overnight Oats recipe is comforting and perfect for fall, offering a warm blend of flavors in a cool, creamy package.

Ingredients:

½ cup rolled oats

1 tbsp chia seeds

1 cup almond milk (or any plant-based milk)

1 tbsp maple syrup

½ tsp ground cinnamon

½ apple, diced

1 tbsp chopped walnuts


Instructions:

In a mason jar, combine rolled oats, chia seeds, almond milk, maple syrup, and ground cinnamon. Stir well.

Add the diced apple and chopped walnuts on top.

Seal the jar and refrigerate overnight.

In the morning, grab your jar and enjoy cold, or heat it up if you prefer a warm breakfast.

Tropical Yogurt Parfait:

¼ cup sliced kiwi

1 tbsp unsweetened shredded coconut


Instructions:

Add the remaining yogurt on top, then sprinkle with shredded coconut.

In a mason jar, combine chia seeds, almond milk, cocoa powder, maple syrup, and vanilla extract. Stir well until fully mixed.

Let it sit for 5 minutes, then stir again to prevent clumping.
