It's time to prepare a meal for a family of four for $20 or less! This week, we’re making a vibrant Veggie Stir Fry that’s both quick to cook and packed with flavor. Ideal for busy evenings, this recipe brings together fresh vegetables and a savory sauce in a satisfying dish everyone will love.

2 cups uncooked rice (or 1 cup cooked): $1.50

1 cup broccoli florets: $1.00

1 cup bell peppers (mixed colors), sliced: $1.50

1 cup carrots, sliced: $1.00

1 cup snap peas: $1.50

3 cloves garlic, minced: $0.25

2 tbsp soy sauce (or tamari for gluten-free): $0.30

2 tbsp hoisin sauce: $1.00

1 tbsp vegetable oil: $0.50

Ingredients:

2 cups uncooked rice (or 1 cup cooked)

1 cup broccoli florets

1 cup bell peppers, sliced

1 cup carrots, sliced

1 cup snap peas

1 small onion, chopped

3 cloves garlic, minced

2 tbsp soy sauce (or tamari for gluten-free)

2 tbsp hoisin sauce

1 tbsp vegetable oil

1 tsp sesame seeds (optional)

1 tsp grated ginger (optional)


Instructions:

Cook the Rice:

Cook 2 cups of rice according to package instructions. Set aside.


Prepare the Stir Fry:

In a large pan or wok, heat 1 tbsp vegetable oil over medium-high heat.

Add the chopped onion and minced garlic. Sauté until fragrant and the onion is translucent.

Add the broccoli florets, sliced bell peppers, carrots, and snap peas. Stir-fry for about 5-7 minutes, or until the vegetables are tender-crisp.


Add the Sauce:

Stir in the soy sauce and hoisin sauce. Mix well to coat all the vegetables.

If using, add the grated ginger and sesame seeds, and stir to combine.


Serve:

Serve the stir-fried vegetables over the cooked rice.
