A vegan mushroom wellington wrapped in a flaky puff pastry crust.

This elegant Mushroom Wellington is the ultimate plant-based showstopper for your holiday table. Flaky golden puff pastry wraps around a rich, savory filling of mushrooms, onions, garlic, and wilted spinach, seasoned with rosemary and thyme. It’s hearty, flavorful, and makes the perfect gourmet centerpiece to impress your guests.

Ingredients

  • 1 sheet of vegan puff pastry

  •  2 cups of sliced mushrooms

  •  1 small onion, finely chopped

  •  2 cloves garlic, minced

  •  2 cups of fresh spinach

  •  1 tbsp olive oil

  •  Salt and pepper to taste

  •  1 tsp thyme

  •  1 tsp rosemary

  •  Vegan egg wash (mix plant-based milk and a bit of maple syrup)


Preparation

  1. Preheat your oven to the temperature specified on the puff pastry package.

  2. In a pan, sauté the onions, garlic, and mushrooms in olive oil until they're tender and any liquid from the mushrooms has evaporated.

  3. Add the spinach and continue to cook until wilted.

  4. Season the mixture with salt, pepper, thyme, and rosemary.

  5. Roll out the puff pastry sheet and place the mushroom filling in the center.

  6. Fold the pastry over the filling to create a Wellington shape. Brush the top with the vegan egg wash.

  7. Bake according to the puff pastry package instructions, usually around 20-25 minutes or until it's golden brown and puffed.
