Gourmet Portobello Mushroom Steak
This meal is rich, savory, comforting, and perfect for a dinner that feels a little elevated while still being simple to prepare.
Portobello mushrooms are one of the best whole-food beef alternatives because of their naturally hearty texture and ability to absorb bold flavors through marinades and seasonings.
We paired the mushroom steak with creamy mashed potatoes and a fresh salad for a complete meal that feels satisfying and nourishing.
Portobello Mushroom Steak Recipe
Ingredients
2 large portobello mushroom caps
1/4 cup coconut aminos or soy sauce
1 tbsp Dijon mustard
1 tbsp maple syrup
1 tsp garlic powder
1 tsp smoked paprika
1 tsp thyme
1 tbsp neutral oil
Instructions
In a bowl, whisk together the coconut aminos or soy sauce, Dijon mustard, maple syrup, garlic powder, smoked paprika, and thyme.
Add the portobello mushrooms to the marinade and allow them to marinate for at least 30 minutes.
Heat a pan over medium heat and add the neutral oil.
Pan sear the mushrooms for about 3 minutes on each side.
Pour the remaining marinade into the pan and continue cooking for another few minutes until the mushrooms are tender and flavorful.
Serve with mashed potatoes and a fresh salad.

Everyday Steak Fajitas
For our everyday option, we wanted something quick, flavorful, and realistic for busy weeknights.
Using Beyond Meat steak tips makes this meal easy to pull together while still delivering the savory flavors and textures people enjoy in fajitas.
This is a great example of how convenient plant-based products can help make transitioning away from beef feel more approachable.
Everyday Steak Fajitas Recipe
Ingredients
1 package Beyond Meat steak tips
1 red bell pepper, sliced
1 orange bell pepper, sliced
1 green bell pepper, sliced
1 white onion, sliced
1 tbsp neutral oil
Tortilla shells
Vegan sour cream or vegan Greek yogurt
Avocado
Spanish rice for serving
Fajita Seasoning
Chili powder
Cumin
Garlic powder
Onion powder
Paprika
Oregano
Salt
Black pepper
Instructions
Heat neutral oil in a large pan over medium heat.
Add the sliced peppers and onions and sauté until softened.
Season the vegetables with fajita seasoning or your preferred fajita seasoning mix.
Add the Beyond Meat steak tips and cook for about 5 minutes, or until heated throughout.
Serve in warmed tortilla shells topped with vegan sour cream or vegan Greek yogurt and avocado.
Pair with Spanish rice for a complete meal.
