Mission Impossible? $20 for a Full Day of Vegan Meals at the Dollar Store

They say eating healthy is expensive.They say eating vegan is even more expensive.

So I decided to put that to the test. I walked into Dollar Tree with one goal: Create a full day of balanced, vegan meals for under $20.


And not just anything…

  • Breakfast

  • Lunch

  • Dinner

  • Snacks

  • Protein in every meal

  • And meals that are actually satisfying


The Rules of the Challenge

Before I even stepped inside, I set a few ground rules:

  • I could only shop at Dollar Tree

  • I had to stay under $20 (not a penny over!)

  • I needed to create three full meals

  • Each meal had to include a source of protein

  • Meals had to be at least somewhat nutritious

  • I could use spices and oil from my pantry

With those rules in place… the mission began.


What I Bought for $19.64

With a tight budget and limited options, every item mattered. I focused on foods that would give me:

  • Protein (lentils, chickpeas, peanut butter)

  • Fiber (oats, legumes, veggies)

  • Versatility (ingredients I could use in multiple meals)



Here’s what I worked with:

  • Frozen fruit mix

  • Oat milk

  • Peanut butter

  • Dry lentils

  • Vegetable broth

  • Frozen vegetable mix

  • Chickpeas

  • Lo mein noodles

  • PopCorners (snack)

  • Peanuts

  • Dried cranberries

Total spent: $19.64


The Meals I Created



🥤 Breakfast: Peanut Butter Fruit Smoothie

A simple, filling start to the day made with:

  • Frozen fruit mix

  • Oat milk

  • Peanut butter



This smoothie had natural sweetness, healthy fats, and plant-based protein to keep me full.

Reality check:I wasn’t sure how this would turn out without extras like bananas or dates—but it actually worked!



🍲 Lunch: Hearty Lentil & Vegetable Soup

This was easily the most nourishing meal of the day.

Made with:

  • Lentils

  • Vegetable broth

  • Frozen vegetable mix



It was warm, comforting, high in fiber, and packed with plant-based protein.


Real Talk moment: This was the point where I thought… “Okay, this challenge might actually be possible.”



🍜 Dinner: Veggie & Chickpea Lo Mein

This meal brought everything together.

Made with:

  • Lo mein noodles

  • Chickpeas

  • Frozen vegetables



It was savory, filling, and honestly felt like a “real meal” despite the budget.


Real Talk Moment: This is the kind of meal I would make again even outside of a challenge.



🥜 Snacks

Because let’s be real—three meals isn’t always enough.

  • PopCorners for something crunchy

  • Trail mix (peanuts + dried cranberries) for a balance of sweet, salty, and protein


Was It Actually Filling?

Yes—and that’s what surprised me the most.

Between the:

  • Lentils

  • Chickpeas

  • Peanut butter

  • Peanuts


I was able to include protein in every meal, which helped keep me satisfied throughout the day.


The Bigger Takeaway

This challenge started off as something fun.

But it quickly turned into something deeper.

For me, this was a one-day experiment.But for many people, shopping at stores like Dollar Tree is a regular part of life.

And that brings up an important question:

How do we make healthy eating accessible for everyone?

Because it’s not just about telling people to “eat better.”It’s about:

  • Access

  • Affordability

  • Education


So… Is It Possible?

Yes—with creativity, intention, and a little flexibility, it is possible to create balanced vegan meals on a tight budget.

But it also shouldn’t be this hard.
