Ingredients:

  • 2 cans chickpeas, drained and rinsed

  • 1/4 cup vegan mayonnaise

  • 2 tbsp yellow or Dijon mustard

  • 1 small red onion, finely chopped

  • 2 stalks celery, finely chopped

  • 2 tbsp pickle relish or chopped pickles

  • 1 pack seaweed snack

  • Salt and pepper to taste

  • 8 slices whole grain bread or 4 whole grain wraps

  • Lettuce leaves (optional)

  • Tomato slices (optional)


Instructions:

Prepare the Chickpea Mixture:

  • In a large bowl, mash the chickpeas with a fork or potato masher until they are mostly broken down but still have some texture.

  • Add the vegan mayonnaise, Dijon mustard, finely chopped red onion, celery, pickle relish or chopped pickles, lemon juice, and seaweed snack.

  • Mix well to combine all ingredients. Season with salt and pepper to taste.


Assemble the Sandwiches/Wraps:

  • Lay out the bread slices or wraps.

  • Spread a generous amount of the chickpea mixture onto each slice of bread or wrap.

  • Add optional lettuce leaves and tomato slices if desired.

  • If making sandwiches, top with another slice of bread. If making wraps, fold the sides and roll up.


Serve:

  • Cut the sandwiches in half if desired, and serve immediately.
