Veggie Lentil Pasta Recipe

Ready in 25 minutes | Makes 4-6 Servings


  • 1-12 oz. package vegan pasta noodles

  • 1/2 lb. dried green lentils

  • 1-28 oz. can crushed tomatoes

  • 1-5 oz. package fresh baby spinach

  • 1 lb. zucchini, diced

  • 1/4 lb. carrot, thinly sliced

  • 2 1/2 Tbsp. soy sauce or liquid aminos

  • 1 1/2 tsp. garlic powder

  • 1 1/2 tsp. onion powder

  • 2 tsp. dried oregano

  • 1/2 - 1 Tbsp. brown sugar or vegan sweetener of choice

  • 1/4 tsp. red pepper flakes

  • salt and pepper to taste


  1. Cook the pasta according to package instruction - minus 2 minutes. Remove from heat, drain, and rinse in cold water and set aside.

  2. Cook lentils according to package instructions. Remove from heat, drain, and rinse in cold water and set aside.

  3. Heat a large pan over medium-high heat. add carrots, zucchini, lentils and all seasonings and dry sauté for about 5 minutes.

  4. Add crushed tomatoes and pasta and gently mix until well combined. Cover with a lid and reduce heat to medium-low. Bring to a simmer and allow to cook for another 5-7 minutes.

  5. Add fresh spinach and gently fold in until evenly distributed in pasta. Turn off the heat and allow the residual heat from the past to wilt the spinach.

  6. Now your pasta is ready to eat - enjoy!
