This hearty Lentil Loaf is the perfect plant-based centerpiece for your holiday table. Packed with savory flavor, tender lentils, and colorful veggies, it’s a comforting and wholesome alternative to traditional meatloaf. Ingredients
1 cup cooked green or brown lentils
1 cup breadcrumbs
1 small onion, finely chopped
2 cloves garlic, minced
½ cup shredded carrots
½ cup diced bell pepper
¼ cup ketchup + 3 tbsp for topping
¼ cup BBQ sauce + 3 tbsp for topping
1 tsp dried thyme
1 tsp dried oregano
Salt and pepper to taste
Preparation
Preheat your oven to 375°F (190°C).
In a large bowl, combine the cooked lentils, breadcrumbs, chopped onion, minced garlic, shredded carrots, diced bell pepper, ketchup, BBQ sauce, dried thyme, and dried oregano.
Season the mixture with salt and pepper to taste and mix everything together until well combined.
Press the lentil mixture into a greased loaf pan.
Bake for 30 minutes until the top is firm and slightly crispy.
Remove and spread some ketchup and barbecue sauce on top then bake for another 10-15 minutes.
Allow it to cool for a few minutes before slicing and serving.
