This vibrant Green Bean Sauté is the perfect dish when you need a flavorful, nutritious side on the table fast, requiring just 15 minutes from start to finish. Fresh green beans are quickly cooked down with aromatic garlic, onion, and colorful bell peppers in a light broth. A final squeeze of lemon brightens the flavors, delivering a simple, satisfying side dish ideal for any weeknight meal or holiday spread.

Ingredients

  • 1 lb green beans, fresh or frozen

  • 3-5 cloves of garlic, thinly sliced (you can also use 1 Tbsp of minced garlic)

  • ½ of a large onion (any variety), thinly sliced

  • 1 bell pepper (any variety), thinly sliced

  • 2 Tbsp vegetable broth, you can also use vegan butter, oil, or water

  • ¼ lemon

  • Salt and pepper to taste


Preparation

  1. Heat a pan over medium heat.

  2. Add vegetable broth (or cooking liquid of your choice), sliced garlic and sliced onions and cook for 3-5 minutes to bring to a simmer.

  3. Add green beans and bell pepper to the pan and mix together until all of the vegetables are evenly distributed. Cover with a lid and allow to cook for another 5-7 minutes.

  4. Remove the lid and continue to mix the vegetables. Season with salt and pepper to taste. Squeeze the juice of ¼ lemon (about 1-2 tsp) over the sauteed green beans to finish and serve.
