Colorful roasted veggies meet a creamy maple-tahini drizzle in this vibrant, flavor-packed side dish. Ingredients

  • Assorted vegetables (e.g., carrots, bell peppers, zucchini, cherry tomatoes, broccoli)

  • 3 tbsp olive oil

  • 2 tbsp tahini

  • 1 tbsp maple syrup

  • 2 tbsp lemon juice

  • 1 clove garlic, minced

  • Salt and pepper to taste


Preparation

  1.  Preheat your oven to 400°F (200°C).

  2. Cut the vegetables into bite-sized pieces and place them on a baking sheet.

  3. Drizzle olive oil over the vegetables and season with salt and pepper.

  4. Roast the veggies for about 20-25 minutes or until they are tender and slightly caramelized.

  5. While the vegetables are roasting, prepare the dressing by whisking together tahini, maple syrup, lemon juice, minced garlic, salt, and pepper.

  6. Drizzle the dressing over the roasted veggies before serving.
