This hearty Shepherd’s Pot Pie is the ultimate recipe for transforming several holiday leftovers—including mashed potatoes, mushroom gravy, and the savory jackfruit and tofu roasts—into one decadent and deeply satisfying meal. Encased in a flaky crust and topped with cheesy garlic mashed potatoes, this comforting dish ensures your festive flavors last well beyond the holiday dinner itself.

  1. Preheat the oven to 375 degrees F.

  2. While the oven heats, add tofu roast, jackfruit roast, green bean sautee, mixed vegetables, and creamy mushroom gravy to a bowl and mix until well bombined. 

  3. Pour into the pie shell, then top with the cheesy garlic mashed potatoes and spread into an even layer.

  4. Place on a baking sheet and place in the oven to cook for 45-60 minutes until the surface of the crust and the mashed potatoes are golden brown.

  5. Remove from the oven and allow to cool for 10-15 minutes then scoop to serve and enjoy.
