Ingredients:

  • 2 cans hearts of palm, drained and shredded

  • 1/4 cup vegan mayonnaise

  • 1 tbsp Dijon mustard

  • 1 small red onion, finely chopped

  • 2 stalks celery, finely chopped

  • Juice of 1 lemon

  • 1 tsp Old Bay seasoning

  • 1 tbsp fresh dill, chopped (optional)

  • 4 hot dog buns

  • 1 tbsp vegan butter, melted

  • Lettuce leaves (optional)


Instructions:

  • Prepare the Hearts of Palm:

    • Drain and shred the hearts of palm into a bowl. The texture should resemble shredded lobster meat.

  • Make the "Lobster" Salad:

    • In the bowl with the shredded hearts of palm, add vegan mayonnaise, Dijon mustard, finely chopped red onion, celery, lemon juice, Old Bay seasoning, and fresh dill if using.

    • Mix well to combine. Taste and adjust seasoning if needed.

  • Prepare the Buns:

    • Lightly brush the insides of the hot dog buns with melted vegan butter.

    • Toast the buns in a pan or on a griddle until golden brown.

  • Assemble the Rolls:

    • Place a lettuce leaf in each bun (optional).

    • Spoon the "lobster" salad into the buns.

  • Serve:
