Golden, flaky, and filled with warm spiced apples, these Vegan Apple Turnovers are the perfect handheld holiday dessert. They’re easy to make, look fancy, and taste like homemade apple pie without all the fuss of a crust! Perfect for Thanksgiving dessert tables, cozy winter mornings, or a sweet holiday brunch treat.

Ingredients
Filling
3 medium apples, peeled and diced (Honeycrisp or Granny Smith work great)
2 tablespoons vegan butter
¼ cup brown sugar or coconut sugar
1 teaspoon cinnamon
¼ teaspoon nutmeg
½ teaspoon vanilla extract
1 teaspoon lemon juice
1 teaspoon cornstarch (optional, for thickening)
Pastry
1 sheet vegan puff pastry, thawed
1 tablespoon non-dairy milk (for brushing)
1 tablespoon coarse sugar (for topping)
Preparation
 Preheat oven to 400°F and line a baking sheet with parchment paper.
In a small saucepan, melt vegan butter over medium heat. Add apples, sugar, cinnamon, nutmeg, vanilla, and lemon juice.
Cook for 5–7 minutes until apples soften and sauce thickens. If needed, stir in cornstarch to thicken further. Let cool slightly.
Roll out puff pastry on a lightly floured surface. Cut into 8 equal squares.
Spoon a small amount of apple filling into the center of each square. Fold diagonally into a triangle and press edges with a fork to seal.
Brush the tops with non-dairy milk and sprinkle with coarse sugar.
Bake for 20–25 minutes, or until puffed and golden brown.
Cool for 10 minutes before serving. The filling will be hot!
