Ingredients
4-5 medium-sized yams or sweet potatoes, peeled and sliced
 ½ cup brown sugar
 ¼ cup maple syrup
 ¼ cup vegan butter
 ½ tsp cinnamon
 ¼ tsp nutmeg
 ¼ tsp salt
Preparation
Preheat your oven to 350°F (175°C).
In a saucepan, combine the brown sugar, maple syrup, vegan butter, cinnamon, nutmeg, and salt. Heat over medium heat until the mixture is smooth and the sugar is dissolved.
Place the sliced yams or sweet potatoes in a baking dish.
Pour the sugar and spice mixture over the potatoes and toss to coat them evenly.
Cover the baking dish with foil and bake for 45-50 minutes.
Remove the foil and bake for an additional 10-15 minutes until the yams are tender and the glaze is bubbly.
