BBQ Chickpea Burgers

Makes 6 Burger Patties | Ready in 40 minutes


Ingredients

  • 1 - 15 oz can chickpeas, drained and rinsed

  • 3 Tbsp chia seeds

  • 1 cup frozen diced butternut squash, steamed until tender

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • ½ tsp smoked paprika

  • 1 Tbsp soy sauce

  • ¼ tsp salt

  • 1 Tbsp bbq sauce + more for serving

  • Hamburger buns

  • Baby spinach or leafy greens of choice

  • Coconut or avocado oil


Preparation

  1. Combine chickpeas, chia seeds, butternut squash, spices, soy sauce, salt, and 1 Tbsp BBQ sauce in a large bowl.

  2. Mash ingredients thoroughly using a potato masher or food processor until well combined but still slightly chunky.

  3. Form mixture into patties:

    • Use ⅓ cup measure to portion

    • Shape into ¼-inch thick discs

  4. Cook patties:

    • Heat oil in a skillet over medium heat

    • Cook 2-3 patties at a time

    • Cover and cook 5-6 minutes per side

    • Aim for deep brown coloration

  5. Assemble burgers:

    • Place patties on bun

    • Top with baby spinach

    • Add BBQ sauce and desired condiments

    • Serve immediately
