Sweet, golden, and irresistibly crisp around the edges, fried plantains are a must at any Caribbean meal. Perfectly ripe plantains are pan-fried until caramelized and tender, adding natural sweetness that balances out spicy and savory dishes beautifully.

Ingredients
2 ripe plantains (yellow with black spots)
2–3 tbsp coconut or avocado oil
Pinch of salt
Preparation
Peel plantains and slice diagonally into ½-inch pieces.
Heat oil in a skillet over medium heat.
Fry plantain slices for 2–3 minutes per side until golden brown.
Remove and drain on paper towels. Sprinkle with salt and serve warm.
