These Jackfruit, Kale & Squash Quesadillas brilliantly transform holiday leftovers—including the savory jackfruit roast and roasted squash and kale salad—into a satisfying, quick-fix meal ready in just minutes. Crispy, cheesy, and packed with flavor and nutrition, these quesadillas are the ultimate solution for making creative use of your elevated leftovers.
Prep Time: 15 minutes | Makes 1-2 servings
Ingredients
1/2 cup Vegan Shredded Cheese
2 Tortillas
Cooking Oil Spray
Preparation
Heat a pan over medium heat and coat with an even layer of oil.
Place a tortilla in the pan and sprinkle half of the tortilla with an even layer of shredded vegan cheese.
Top with a few scoops of jackfruit roast and roasted squash and kale salad, then cover with another layer of shredded vegan cheese.
Use a spatula to flip over the other half of the tortilla to close it.
Repeat the process to make another quesadilla, then cover with a lid and cook for 3-4 minutes until the base of the tortilla is golden brown. Remove the lid and gently flip the quesadillas with a spatula, then cover with a lid again and cook for another 3-4 minutes.
When the quesadillas are done cooking, carefully place them on a plate with a spatula and slice them in half to serve and enjoy.
