This comforting Holiday Ramen is the perfect post-feast remedy, brilliantly turning leftover Tofu Roast and collard greens into a flavorful, quick, and satisfying meal in just ten minutes. Simple ingredients combine with the rich ramen broth to deliver a warming, restorative dish that makes the most of your festive leftovers.
Prep Time 10 minutes: | Makes 1 serving
Ingredients
2 cups of water
1 package vegetarian ramen
½ cup collard greens
¼ block tofu roast, thinly sliced
Bean spouts or vegetables of choice
Thinly sliced scallions
Chili flakes, optional
Hoisin sauce, optional
Preparation
Boil Water: Heat a saucepan over medium-high heat and add 2 cups of water. Bring the water to a full boil.
Cook Noodles: Add the ramen noodles (discarding the seasoning packet for now) to the boiling water and cook for 2–3 minutes, stirring occasionally until the noodles are just cooked.
Transfer Noodles: Carefully remove the cooked noodles from the pan using a fork or strainer and place them directly into a serving bowl. Set aside.
Flavor Broth: Add the ramen seasoning packet to the hot water remaining in the saucepan and mix until fully dissolved.
Simmer Greens: Add the collard greens to the seasoned broth. Gently stir occasionally until the broth returns to a simmer, then immediately remove the saucepan from the heat.
Combine: Carefully pour the greens and hot broth directly over the noodles in the serving bowl.
Heat Tofu: Heat the sliced tofu roast separately in a small pan or microwave for 1–3 minutes until heated through.
Garnish & Serve: Add the heated tofu roast to the bowl of ramen along with the beansprouts, sliced scallions, and any optional garnishes like chili flakes or hoisin sauce. Serve right away.
