What a Black Vegan Eats: A Day of Nourishing & Budget-Friendly Meals

A day of delicious, nourishing, and budget-friendly plant-based meals!



Today’s meals are simple, satisfying, and packed with flavor! I started the day with a refreshing smoothie bowl, had a protein-packed chickpea “tuna” sandwich for lunch, and ended with a hearty breakfast burrito for dinner. These meals are quick, easy to prepare, and budget-friendly, proving that plant-based eating can be both affordable and delicious!

Breakfast: Smoothie Bowl with Banana, Blueberries & Coconut Flakes



What I Ate: I started my day with a refreshing smoothie bowl packed with antioxidants and healthy fats. It’s an easy, nutrient-dense breakfast that feels like a treat!




Lunch: Chickpea “Tuna” Sandwich



What I Ate: For lunch, I made a Chickpea "Tuna" Sandwich, a plant-based take on the classic tuna salad sandwich. It’s high in protein, budget-friendly, and super satisfying! I enjoyed it with some apple slices and tortilla chips.




Snack: Mixed Nuts & Banana



What I Ate: I kept it simple with a handful of cashews and almonds and a banana for an energy boost.



Dinner: Breakfast Burritos



What I Ate: Who says breakfast is only for the morning? I made Breakfast Burritos filled with tofu scramble, black beans, and sautéed veggies for a hearty, protein-packed dinner.




Beverages: Water & Hot Tea



What I Drank: I started my morning with a warm cup of hot tea to wake up my body and finished my day with plenty of water to stay hydrated.
